When life hands you lemons make cookies

If you are having a moment of super hero exhaustion, cookies are the solution.  Don’t question it.  I’m right.  Trust me.  The warm, comforting smell of freshly baked cookies right now are all the proof I need. 

Super hero exhaustion comes from insurmountable stress.  To keep it simple and delicious try this recipe courtesy of Paula Deen:

Ingredients

  • 1 large egg
  • 1 cup peanut butter
  • 1 cup sugar
  • approx. 30 unwrapped Hershey’s kisses
Directions
Heat oven to 350 degrees Fahrenheit.  Line a baking sheet with parchment paper and set aside. 
In a mixer bowl, beat together the egg, peanut butter, and sugar until a dough forms. 
Shape the dough into small balls and place on the baking sheet spacing appropriately. 
Bake for 10 minutes.  Remove baking sheet from oven and immediately press a chocolate kiss in the middle of each cookie. 
Transfer to a rack and cool.

These cookies are so easy and so craveably good the lemons in your life will melt away in peanut butter and chocolatey pleasure.

Or if you’re like me and you don’t have Hershey’s kisses, you can always bake the premade chocolate chip cookie dough from the tub in the fridge.  That works too!
